Celebrating the Taste of the South

Love cooking? Love the Southern United States?

Tonight, we’re celebrating both, as we sample the flavors of the Southern United States at a special evening hosted by Ambassador Barzun at his residence, Winfield House.

We have chefs from both America and Britain(!) serving up the diverse tastes that characterize Southern cuisine, from dishes bursting with fresh sweet potato and pecan flavor, to plates of tasty wood-smoked pulled pork, served straight off the barbecue.

But if you’re not coming tonight, fear not – here are some mouth-watering dishes that may give you just that little bit of inspiration you need to perfect a Southern speciality in the kitchen. (Click the image to enlarge).

  1. Pecan Pie
    Yields 1, 9-inch pie
    Ingredients
    Crust:
    • 1 pre-baked, 9-inch pie shell (homemade or store-bought)
    Filling:
    • 3 eggs
    • 2 1/4 cups pecans
    • 1 2/3 cups dark corn syrup
    • 1 cup brown sugar
    • 1/3 cup honey
    • 6 tablespoons (3/4 stick) unsalted butter, melted
    • 1 teaspoon vanilla extract
    Directions
    1. Preheat oven to 350º F and position oven rack to middle of oven. Lightly grease a 9-inch pie dish.
    2. Prepare pie shell according to (packaging) directions.
    3. Place pecans in food processor and pulse for 5 seconds, or until roughly chopped.
    Note: if you don’t have a food processor, place nuts in a re-sealable plastic bag and use a rolling pin or other heavy object to roughly chop/break them into smaller pieces.
    4. In a large bowl, whisk together the eggs, corn syrup, sugar, honey, butter and vanilla extract.
    5. Fold in pecans and mix so they’re thoroughly coated. Then pour over hot crust.
    6. Return to oven and bake for 25-30 minutes, or until filling has set.
    7. Remove and let cool completely before serving.
